Corn and Ground Beef and Potatoes Recipe

Want a delicious and easy weeknight dinner that uses minimal ingredient and the family loves? This Hamburger Casserole is a family favorite that has minimal ingredients and can be prepared ahead of time to pop in the oven.

Casseroles, or hot dishes in my neck of the woods are one of my favorite recipes. They are things you can just throw together in a pan and come out done and ready for you to devour.

We lov a variety of casseroles, but this Hamburger Casserole is one my mom used to make me growing up, and somehow it never got old.

WHY THIS RECIPE WORKS:

  • With minimal and readily available ingredients, this recipe is super simple to just whip up on any given week day.
  • No weird methods involved, just layer your ingredients onto of one another and pop in the oven and in an hour you will have a casserole hot and ready for you.
  • This recipe is easily adaptable to add whatever you like to, consider this a base recipe to add your favorite different ingredients to.

So like I said, this is one of those recipes I have been eating for the better part of my 32 years on this earth.

It's such a simple Hamburger Casserole that you'd be surprised that such little ingredients can make such a tasty dinnertime meal!

With 3 main ingredients including ground beef, potatoes and corn, you have a great combination and multiple different food groups in one.

HOW TO MAKE HAMBURGER CASSEROLE, STEP BY STEP:

Preheat oven to 350. In skillet add your ground beef and onion and cook until beef is no longer pink and onions are translucent, drain. Add this to a 9″x13″ baking dish and sprinkle with salt and pepper (Photos 1-3).

Next, slice your potatoes into rounds about 1/4″ or less thick and layer them on top of your hamburger mixture, again salt and pepper this layer, then top with corn (Photos 4 & 5).

In bowl add a can of cream of chicken soup and a can of water, whisk together until combined then pour over your casserole, top with another layer of salt and pepper and bake covered in oven for 1 hour (Photos 6-9).

This Hamburger Casserole is one of those recipes that we like to keep on rotation monthly, no matter the time of the year, it works anytime.

WHAT TYPE OF POTATOES TO USE:

For this recipe you can essentially use any type of potatoes you want, we regularly use russet, but you can also use Yukon gold, red, etc.

It is more of a personal preference type of deal, they usually all cook up the same, so I say that you can use what you have on hand.

TIPS AND TRICKS FOR MAKING HAMBURGER CASSEROLE:

  • Use at least 80/20 ground beef, even after cooking and draining, heating in the oven will emit more grease in the pan, you can dump this off, but we are used to a little liquid at the bottom of the dish.
  • Use fresh, frozen or canned corn. If frozen, defrost before cooking.
  • You can add more vegetables as you like, my one son isn't a fan of corn, so we sometimes swap it out for green beans, or do a mixture of mixed vegetables as well.
  • You can use milk instead of the water in the soup recipe, my mom always has used water, but we have used milk as well.
  • Check your potatoes for doneness before pulling from the oven to make sure each layer is done.
  • For a little extra kick, add a layer of cheese to the top before baking! Who doesn't love cheese anyways!

  • 1 lb ground beef
  • 1 small onion
  • 1 1/2 lb potatoes, peeled and sliced to 1/4" thickness
  • 1 15 oz can corn, drained
  • 1 10.5 oz can cream of chicken soup
  • 1 10.5 oz can water
  • Salt and pepper
  • Preheat oven to 350.

  • In saute pan, add your onions and ground beef and cook until beef is no longer pink and onions are translucient, drain.

  • Layer your sliced potatoes on top of your ground beef mixture, again sprinkle with salt and pepper.

  • Spread your corn over the top of your potato mixture and spread around evenly.

  • In bowl whisk together your soup and water and pour over entire casserole, sprinkle with a little bit more salt and pepper and cover and bake for 1 hour or until potatoes are tender.

  • Let cool slightly before serving.
